Oh man…my mouth started to water when I saw this recipe! About 10 years ago, I was told by my doctor that I had a slight gluten intolerance and since then I choose to not have bread very often. Do I miss it? Not really, as I do have it every once in a while, when I want to…BUT with this recipe, I can choose TO have these “breadsticks” whenever I want to without blowing my diet!
- 1 Large head of cauliflower
- 2 cloves of garlic, grated or minced
- 2 large eggs, lightly beaten
- 4 oz. low-fat mozzarella cheese
- ½ tsp. onion powder
Preheat over to 450 degrees. Steam cauliflower until soft and rinse with cold water and strain. Place in food processor and blend until it’s a mashed potato texture. In a medium blow stir together cauliflower, eggs, cheese and seasonings. Lightly spray a baking pan with olive oil and coat with the mixture (about a ½ inch thick). Bake at 450 degrees for 20-25 minutes or until the top starts to brown. Add additional cheese to the top and enjoy!
You can also serve these babies with your own homemade “pizza” sauce by mixing together a pureed tomato, chopping another into small pieces and add fresh chopped basil, oregano and maybe a hint of Stevia!
