If you haven’t been seeing all the reports on the numerous health benefits of coconut oil, you may have been living under a rock (or in the bush without TV or phone like Mark and I did for about three years). We started adding the solid at room temp oil to our smoothies, deep frying sweet potatoes on the stovetop or even just eat a tablespoon right out of the jar! To make it easier to get a tablespoon I will line a mini-muffin tin with paper cups and double boil the oil to liquify it and then measure a tablespoon in the cups and let chill. (Do NOT microwave as it can alter the chemical makeup while “cooking”).
There are numerous health benefits including some reports that adding three tablespoons a day has shown promise in slowing or easing of Alzheimer symptoms and ladies…it can aid in losing belly fat!! The jury may still be out on some of the health claims, but healthy fats are good for our brains and adding a couple tablespoons a day can’t hurt!
