Don’t think you have time to cook a great tasting meal that the family will love? Let me help you with that! Prior to our move we were busy liquidating the gym equipment and TRYING to be organized with packing so we didn’t have a lot of extra time to cook. Enter Salsa Chicken. It is BY FAR the EASIEST meal you can make (in my humble opinion), tastes great, and clean up is a breeze! What you will need:
- Chicken (amount will depend on how many you are cooking for…whether it is a whole chicken, or boneless/skinless chicken breast. Use your judgement…cook extra to reheat for an even easier meal!
- A jar of your favorite salsa
- Cook until the chicken is cooked all the way through.
Yes, that’s it. What is the cooking instructions? Well, depends on how you cook it. You can put in a crock pot, a frying pan on the stove or bake in the oven. When I cook it, I use enough water to cover the bottom of the pan, pot or crockpot with to about 1/4″ deep. Add salsa…last time I had two large chicken breasts in a large frying pan so I used about 1/2 c. of salsa.
You can serve these guys just as they are, with a massive green salad on the side, or shred the chicken and make a salsa chicken wrap with whole grain wraps (gluten free if needed) with a plain Greek yogurt (instead of sour cream), a little shredded cheese, lettuce and guacamole (if that’s your liking). Use your imagination, I bet there are hundreds of ways you can incorporate this into your weekly meal planning!
